Mango Coconut Bliss Balls

Nothing says tropical bliss quite like the combination of coconut and mango!

Ingredients
  

  • 1 cup glutinous rice flour
  • 2/3 cup coconut milk
  • ¼ cup granulated sugar
  • ½ cup mango puree
  • ½ cup shredded desiccated coconut unsweetened
  • ¼ cup water
  • Pinch of salt

Instructions
 

  • In a mixing bowl, combine glutinous rice flour, granulated sugar, and a pinch of salt.
  • Gradually stir in coconut milk and water, mixing until you achieve a smooth, thick batter.
  • Transfer the batter to a heatproof dish. Steam over medium heat for 20-25 minutes until it forms a soft, sticky dough. Let it cool slightly for easier handling.
  • While the dough cools, scoop small portions (about ½ tsp) of mango puree onto a plate and freeze for 15 minutes to firm it up.
  • Grease your hands lightly with oil to prevent sticking.
  • Take a tablespoon of the dough, flatten it into a disc, and place a dollop of chilled mango puree in the center.
    Gently wrap the dough around the puree, rolling it into a smooth ball.
  • Roll each ball in desiccated coconut until fully coated. Place the bliss balls on a plate or tray.
  • Refrigerate the bliss balls for 15 minutes to set. Serve chilled and enjoy!
