In a mixing bowl, combine glutinous rice flour, granulated sugar, and a pinch of salt.
Gradually stir in coconut milk and water, mixing until you achieve a smooth, thick batter.
Transfer the batter to a heatproof dish. Steam over medium heat for 20-25 minutes until it forms a soft, sticky dough. Let it cool slightly for easier handling.
While the dough cools, scoop small portions (about ½ tsp) of mango puree onto a plate and freeze for 15 minutes to firm it up.
Grease your hands lightly with oil to prevent sticking.
Take a tablespoon of the dough, flatten it into a disc, and place a dollop of chilled mango puree in the center. Gently wrap the dough around the puree, rolling it into a smooth ball. Roll each ball in desiccated coconut until fully coated. Place the bliss balls on a plate or tray.
Refrigerate the bliss balls for 15 minutes to set. Serve chilled and enjoy!
