Prepare the fries according to package directions or make homemade ones until golden and crispy.
Heat olive oil in a skillet over medium-high, season the steak with smoked paprika, salt, and pepper, and sear 2–3 minutes per side until browned and cooked to your liking.
Transfer to a plate. Lower the heat, add butter and garlic, cooking 30 seconds until fragrant.
Toss in the shrimp, season with salt and pepper, and cook 2–3 minutes per side until pink and just done.
Place fries on an oven-safe platter, sprinkle with shredded cheese, and broil 2–3 minutes until melted and bubbly.
Top with steak and shrimp, garnish with parsley, and serve with sour cream or ranch.
