Lemon Oatmeal No-Bake Cookies

These no-bake lemon oatmeal cookies are soft, chewy, and zesty, made with pantry staples and fresh lemon juice. They’re a quick, oven-free treat perfect for any time.

Ingredients

  • ½ cup unsweetened shredded coconut (optional)
  • ¼ cup butter
  • ½ cup sugar
  • ¼ cup milk
  • ¼ cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • ¼ tsp salt

Instructions
 

  • Melt ¼ cup butter in a medium saucepan over medium heat, stirring occasionally.

  • Remove from heat and stir in ¼ cup lemon juice, 1 tbsp lemon zest, and 1 tsp vanilla extract.
  • Add 1½ cups oats and ½ cup shredded coconut (optional). Mix well until evenly coated.
  • Drop spoonfuls onto a parchment-lined baking sheet. Let cool at room temperature for 30 minutes, or chill in the fridge to speed up the process.
