Lemon Oatmeal No-Bake Cookies
These no-bake lemon oatmeal cookies are soft, chewy, and zesty, made with pantry staples and fresh lemon juice. They’re a quick, oven-free treat perfect for any time.
- 1½ cups cups old-fashioned oats
- ½ cup unsweetened shredded coconut (optional)
- ¼ cup butter
- ½ cup sugar
- ¼ cup milk
- ¼ cup fresh lemon juice
- 1 tbsp lemon zest
- 1 tsp vanilla extract
- ¼ tsp salt
Melt ¼ cup butter in a medium saucepan over medium heat, stirring occasionally.
