Lemon Garlic Chicken Bites
Juicy chicken bites cooked with garlic, butter, herbs, and a splash of fresh lemon juice—this easy skillet meal is full of flavor and ready in 20 minutes.
- 1 lb chicken breast cut into bite-sized pieces
- 1 tsp dried oregano
- 1 tsp dried basil
- 2 tbsp fresh parsley chopped
- 1 tsp kosher salt
- ½ tsp black pepper
- 3 tbsp unsalted butter divided
- 3 cloves garlic minced
- 2 tbsp fresh lemon juice
Toss chicken with oregano, basil, parsley, salt, and pepper in a bowl.
Sear chicken in 1½ tbsp butter over medium heat, 4–5 minutes per side, until golden and cooked through. Work in batches if needed.
Push chicken aside, melt remaining butter, add garlic, cook 1 minute, then mix with chicken.
Pour in lemon juice, stir to coat, and cook for 30 seconds.
Serve hot over rice, salad, or veggies. Garnish with parsley if desired.
