Key Lime Truffles
Key Lime Truffles are a delicious, bite-sized treat that combines the tangy flavor of fresh lime with creamy white chocolate and a crunchy graham cracker coating. Easy to make, these truffles are the perfect addition to any gathering or as a simple sweet snack.
- ¼ cup heavy whipping cream
- ¼ cup sweetened condensed milk
- 4 tablespoons lime zest
- 2 cups white chocolate chips
- 2 tablespoons lime juice
- 1 tablespoon unsalted butter softened
- 2 cups crushed graham crackers
Simmer heavy cream, sweetened condensed milk, lime zest, and lime juice. Remove from heat and stir in butter until melted and smooth.
Melt white chocolate chips using a double boiler or microwave until smooth.
Stir the slightly cooled lime mixture into the melted white chocolate. Let cool for 10–15 minutes to thicken.
Scoop and roll the mixture into 1-inch balls. Place on a parchment-lined baking sheet and refrigerate for at least 30 minutes.
Crush graham crackers into crumbs. Roll each truffle in the crumbs to coat fully.
Refrigerate the coated truffles for another 30 minutes. Serve chilled for best texture and flavor.
