For the Pork Bites:
- 1 ½ pounds pork tenderloin or pork loin cut into 1-inch cubes
- 2 tablespoons olive oil or avocado oil
- 1 teaspoon salt adjust to taste
- ½ teaspoon freshly ground black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
For the Garlic Butter Sauce:
- 4 tablespoons unsalted butter
- 5 cloves garlic minced (or more if you’re a garlic lover)
- ½ teaspoon red pepper flakes optional
- 2 tablespoons fresh parsley chopped
- 1 teaspoon lemon juice optional
Cut pork into 1-inch cubes, trimming excess fat. Pat dry. Mix salt, pepper, paprika, garlic powder, and onion powder; coat pork evenly.
Heat oil in a skillet over medium-high. Cook pork in a single layer, 2–3 minutes per side until golden. Remove and set aside.
Lower heat to medium. Melt butter, sauté garlic 30–60 seconds. Add red pepper flakes and lemon juice if using.
Return pork to skillet, toss in sauce. Cook 2–3 minutes until pork reaches 145°F (63°C). Garnish with parsley.
