Irresistible Peach Cobbler Cookies

These Peach Cobbler Cookies are a delicious twist on the classic dessert, featuring fresh peaches, cinnamon sugar, and a soft, chewy texture—perfect for summer or anytime you crave a fruity treat.

Ingredients
  

  • 1 cup unsalted butter softened
  • cups granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 cups fresh peaches peeled and sliced
  • 2 tbsp cinnamon sugar for garnish

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes with an electric mixer.
  • Mix in the eggs one at a time, then stir in the vanilla extract until well combined.
  • Whisk together the flour, baking soda, and salt in a separate bowl. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Gently fold in the sliced peaches, making sure they stay in big chunks without breaking apart.
  • Scoop spoonfuls of dough onto the baking sheet, spacing them about 2 inches apart. Lightly sprinkle cinnamon sugar on top of each cookie.
  • Bake for 12-15 minutes, or until the edges are golden brown and the centers are set.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
