Irish Bacon Cabbage And Potato Soup

- 6 slices of Irish bacon or thick-cut bacon
- 1 large onion
- 2 cloves garlic
- 4 cups chicken broth
- 3 large potatoes
- 3 cups green cabbage
- 1 cup carrots
- 1 bay leaf
- 1 tsp dried thyme
- Salt and black pepper
In a large pot over medium heat, cook the diced bacon for 5-7 minutes until crispy. Remove with a slotted spoon, leaving the drippings in the pot.
Add the onion and garlic to the drippings. Sauté for 2-3 minutes until soft and fragrant.
Stir in the potatoes, cabbage, and carrots. Pour in the chicken broth, then add the bay leaf, thyme, black pepper, and salt. Bring to a gentle boil.
Reduce heat and let the soup simmer for 20-25 minutes, stirring occasionally, until the potatoes and cabbage are tender.
Stir in the crispy bacon, remove the bay leaf, and adjust seasoning if needed. Serve hot with fresh bread or soda bread.
