Hummingbird Bread With Cream Cheese Frosting

This moist, fruity bread topped with a luscious cinnamon cream cheese frosting is a heavenly treat! Perfect as a snack or dessert, every slice is pure indulgence.

Ingredients
  

For the bread:

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ cup unsalted butter softened
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup mashed ripe bananas about 2 bananas
  • 1 cup crushed pineapple drained
  • ½ cup chopped pecans

For the frosting:

  • 8 oz cream cheese softened
  • ¼ cup unsalted butter softened
  • 1 tsp cinnamon
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a loaf pan.
  • Whisk flour, baking soda, salt, and cinnamon in a bowl.
  • In a large bowl, beat butter and sugar until fluffy. Mix in eggs, one at a time, followed by vanilla, bananas, and pineapple.
  • Gradually mix in dry ingredients until just combined. Fold in pecans.
  • Pour batter into the loaf pan and bake for 50-60 minutes, or until a toothpick comes out clean. Cool completely.
  • Beat cream cheese, butter, cinnamon, powdered sugar, and vanilla for frosting. Spread over cooled bread and slice.
