Whisk together soy sauce, honey, rice vinegar, sesame oil, grated ginger, and minced garlic in a small bowl until the honey dissolves and the ingredients combine.
Place the salmon fillets in a shallow dish or resealable bag, then pour the marinade over them, ensuring they are fully coated. Refrigerate for 30 minutes.
Preheat your air fryer to 400°F (200°C) for 3-5 minutes.
Remove the salmon from the marinade and place it in the air fryer, skin-side down. Cook for 10-12 minutes, or until the salmon flakes easily and reaches 145°F (63°C).
If desired, simmer the leftover marinade in a saucepan for 2-3 minutes until it thickens to make a sauce.
Sprinkle sesame seeds and chopped green onions over the salmon. Serve with steamed rice, quinoa, or roasted vegetables.
