Homestyle Chicken Mashed Potato Bowls combine creamy mashed potatoes, seasoned chicken, vegetables, and warm gravy into a hearty, comforting meal served all in one bowl.
- 2 lbs russet potatoes peeled and cubed
- 4 tablespoons butter
- ½ cup whole milk
- Salt and black pepper to taste
- 2 cups cooked chicken diced or shredded
- 1 tablespoon olive oil
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- 1 cup chicken gravy
- 1 cup corn kernels or green peas
- ½ cup shredded cheddar cheese
- Chopped fresh parsley for garnish
Boil the cubed potatoes in salted water for 15 to 18 minutes until fork tender, then drain well and let excess steam escape.
Mash the hot potatoes with butter and milk until smooth and creamy, seasoning with salt and black pepper to taste.
Heat olive oil in a skillet and warm the cooked chicken with paprika, garlic powder, salt, and pepper for 4 to 5 minutes.
Warm the gravy gently in a saucepan over low heat, stirring occasionally without boiling.
