Homemade Mexican Pizza
This homemade Mexican pizza combines crispy tortillas, seasoned beef, refried beans, and melted cheese, all topped with fresh veggies. It’s easy to make, incredibly flavorful, and a perfect alternative to takeout.
- 1 pound lean ground beef
- 1 ounce taco seasoning
- ½ cup water
- 6 medium flour tortillas
- 1 can refried beans
- 1 can red enchilada sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded pepper-jack cheese
- 1 Roma tomato
- 1 green onion
- 1 small can sliced black olives
Crisp the Tortillas: Preheat the oven to 375°F and lightly spray two baking sheets with non-stick spray. Place three tortillas on each sheet and bake for 3-5 minutes. Flip them over and bake for another 2-5 minutes until golden and crispy. Set aside.
Cook the Beef: In a skillet over medium-high heat, brown the ground beef, breaking it into crumbles. Drain any excess grease, then stir in taco seasoning and ½ cup of water. Simmer for 10 minutes, then remove from heat.
Warm the Beans: Microwave the refried beans for 30-45 seconds until they are easy to spread.
Assemble the Pizza: Spread a thin layer of refried beans on one crispy tortilla, then top with seasoned beef. Place another tortilla on top.
Add Toppings: Spread 3 tablespoons of enchilada sauce over the top tortilla. Sprinkle with cheddar and pepper-jack cheese, then add diced tomatoes, green onions, and sliced black olives.
Bake and Serve: Return the pizzas to the oven and bake for 5 minutes until the cheese is melted and bubbly. Let them cool slightly, then slice and serve.
