Whisk together flour, sugar, baking powder, baking soda, and salt. Add the egg, milk, melted butter, and maple syrup, then mix until just combined.
Preheat a skillet or griddle over medium heat and grease with butter or oil. Pour small rounds of batter (3–4 inches wide) onto the pan.
Cook for 1–2 minutes until bubbles form, flip, and cook for another 1–2 minutes until golden brown. Set aside.
Cook the sausage patties (5–6 minutes per side) or bacon (4–5 minutes per side) in a separate pan until crispy. Set aside.
In the same pan, fry eggs to your liking, using an egg ring for round eggs. Cook for about 2 minutes on each side. Set aside.
Place a pancake on a plate. Add a sausage patty or bacon, a slice of cheese, and a fried egg. Top with another pancake. Drizzle with maple syrup and serve hot!
