Homemade Lemonies

Ingredients
  

For the Lemonie Base:

  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • Pinch of salt

For the Lemon Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest

Instructions
 

  • Step 1: Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking pan or line it with parchment paper.
  • Step 2: In a mixing bowl, whisk together melted butter and sugar until smooth. Add eggs, lemon juice, and zest, mixing until well combined.
  • Step 3: Sift in the flour, baking powder, and salt. Gently fold the mixture until it forms a smooth batter. Avoid overmixing.
  • Step 4: Pour the batter evenly into the prepared baking pan. Bake for 20–25 minutes, or until the edges turn golden and a toothpick inserted in the center comes out clean.
  • Step 5: While the lemonies cool, prepare the glaze by whisking powdered sugar, lemon juice, and zest until smooth.
  • Step 6: Spread the glaze evenly over the cooled lemonies. Let it set for 15 minutes before cutting into squares or bars.
  • Step 7: Serve and enjoy your tangy homemade lemonies!
