In a bowl, mix the raw almonds, pumpkin seeds, sunflower seeds, dried cranberries, and unsweetened coconut flakes using a hand mixer.
For the syrup, combine honey, maple syrup, and sea salt in a small saucepan and heat until well-mixed.
Pour the syrup over the nut mixture and stir until fully combined. Firmly press the mixture into a lined baking tray.
Place the tray in the freezer for at least 2 hours to set.
Once set, cut the mixture into bars. Dip each bar in melted dark chocolate and sprinkle with fleur de sel.
Put the bars back in the freezer for 15 minutes to allow the chocolate to harden then enjoy!
