Cut each string cheese stick in half and place on a parchment-lined baking sheet. Freeze for 1–2 hours to prevent melting during frying.
Add flour to one bowl. Whisk eggs with water in another. In a third bowl, combine breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
Coat each frozen stick in flour, dip in egg, and roll in breadcrumbs. For extra crunch, repeat the egg and breadcrumb coating.
Heat 1 inch of oil in a skillet over medium until it reaches 350°F. A breadcrumb should sizzle when dropped in.
Fry a few sticks at a time for 1–2 minutes, turning until golden. Remove as soon as they begin to ooze.
Transfer to a paper towel-lined plate. Let cool for a minute or two before serving.
