Hobo Casserole
Hobo Casserole is a one-pan wonder made with ground beef, veggies, tater tots, and a creamy mushroom sauce. Topped with melted cheese, it’s a hearty, comforting meal that the whole family will love.
- 1 lb ground beef
- 1 onion diced
- 2 cups frozen mixed vegetables peas, corn, carrots
- 1 can 10.5 oz cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1 cup tater tots
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- ½ teaspoon paprika
- Fresh parsley chopped (for garnish)
Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish.
Heat 1 tablespoon olive oil in a skillet over medium heat. Sauté diced onion for 3-4 minutes until translucent. Add ground beef, breaking it apart as it cooks. Season with garlic powder, paprika, salt, and pepper.
Stir in frozen mixed vegetables and cream of mushroom soup. Mix well until everything is combined.
Spread the beef mixture evenly in the greased baking dish. Arrange tater tots in a single layer on top and sprinkle shredded cheddar cheese over them.
Bake for 30-35 minutes, until tater tots are golden and crispy, and cheese is melted. Cover with foil if the tater tots brown too quickly.
Let the casserole cool for a few minutes. Garnish with chopped parsley and serve!
