Hobo Casserole

Hobo Casserole is a one-pan wonder made with ground beef, veggies, tater tots, and a creamy mushroom sauce. Topped with melted cheese, it’s a hearty, comforting meal that the whole family will love.

Ingredients
  

  • 1 lb ground beef
  • 1 onion diced
  • 2 cups frozen mixed vegetables peas, corn, carrots
  • 1 can 10.5 oz cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 cup tater tots
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • ½ teaspoon paprika
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  • Heat 1 tablespoon olive oil in a skillet over medium heat. Sauté diced onion for 3-4 minutes until translucent. Add ground beef, breaking it apart as it cooks. Season with garlic powder, paprika, salt, and pepper.
  • Stir in frozen mixed vegetables and cream of mushroom soup. Mix well until everything is combined.
  • Spread the beef mixture evenly in the greased baking dish. Arrange tater tots in a single layer on top and sprinkle shredded cheddar cheese over them.
  • Bake for 30-35 minutes, until tater tots are golden and crispy, and cheese is melted. Cover with foil if the tater tots brown too quickly.
  • Let the casserole cool for a few minutes. Garnish with chopped parsley and serve!
