Heavenly Moist Fruitcake
This recipe is a delightful blend of dried fruits, nuts, and warm spices, soaked in rich flavors.
- 1 cup unsalted butter room temp
- 1 cup granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- 1 cup mixed dried fruit raisins, currants, apricots
- ½ cup chopped nuts walnuts, pecans
- ½ cup orange juice
Preheat oven to 325°F (165°C) and grease a 9×5-inch loaf pan.
Cream butter and sugar until fluffy. Add eggs, one at a time, then stir in vanilla.
Whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a separate bowl.
Gradually add the dry mixture to the wet ingredients, mixing until smooth.
Fold in dried fruit and chopped nuts. Stir gently until well combined.
Pour batter into loaf pan. Bake for 70-80 minutes. Let cool before transferring to a wire rack.
