Heavenly Moist Fruitcake

This recipe is a delightful blend of dried fruits, nuts, and warm spices, soaked in rich flavors.

Ingredients
  

  • 1 cup unsalted butter room temp
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 cup mixed dried fruit raisins, currants, apricots
  • ½ cup chopped nuts walnuts, pecans
  • ½ cup orange juice

Instructions
 

  • Preheat oven to 325°F (165°C) and grease a 9×5-inch loaf pan.
  • Cream butter and sugar until fluffy. Add eggs, one at a time, then stir in vanilla.
  • Whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a separate bowl.
  • Gradually add the dry mixture to the wet ingredients, mixing until smooth.
  • Fold in dried fruit and chopped nuts. Stir gently until well combined.
  • Pour batter into loaf pan. Bake for 70-80 minutes. Let cool before transferring to a wire rack.
