Hearty Taco Loaded Baked Potatoes

Taco Loaded Baked Potatoes feature crispy baked russet potatoes topped with taco seasoned beef, melted cheddar cheese, fresh tomatoes, and sour cream. A hearty and easy dinner perfect for busy weeknights.

Ingredients
  

  • 4 large russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon coarse salt
  • 1 pound ground beef 90% lean
  • 1 taco seasoning packet
  • cup water
  • 1 cup sharp cheddar cheese freshly grated
  • ½ cup sour cream
  • 2 green onions finely sliced
  • 1 cup diced ripe tomatoes

Instructions
 

  • Bake potatoes at 400°F for 45 to 50 minutes.
  • Cook ground beef over medium heat until browned.
  • Add taco seasoning and water, simmer 5 minutes.
  • Slice potatoes and fluff the inside.
  • Add beef, cheese, sour cream, green onions, and tomatoes.
