Hearty Old-Fashioned Goulash
Hearty one-pot goulash with ground beef, bell peppers, tomatoes, and elbow macaroni simmered in savory spices, perfectly simple and family-friendly.
- 2 pounds ground beef
- 1 large onion finely chopped
- 2 cloves garlic minced
- 1 green bell pepper diced
- 1 red bell pepper diced
- 2 cups elbow macaroni
- 28 ounces crushed tomatoes
- 15 ounces tomato sauce
- 2 tablespoons tomato paste
- 2 teaspoons paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and black pepper to taste
Optional Finish
- 2 cups shredded cheddar cheese
Cook 2 lb ground beef in a skillet over medium-high heat until browned. Drain excess fat.
Add chopped onion and garlic; cook 2–3 minutes. Stir in bell peppers; sauté another 2–3 minutes.
Mix in crushed tomatoes, tomato sauce, tomato paste, paprika, oregano, basil, salt, and pepper.
Stir in elbow macaroni. Cover and simmer on low for 15–20 minutes, stirring occasionally, until pasta is al dente.
Top with cheddar cheese in the final minutes. Cover until melted.
Spoon into bowls. Garnish with cheese or parsley if desired. Serve warm.
