Hearty Old-Fashioned Goulash

Hearty one-pot goulash with ground beef, bell peppers, tomatoes, and elbow macaroni simmered in savory spices, perfectly simple and family-friendly.

Ingredients
  

  • 2 pounds ground beef
  • 1 large onion finely chopped
  • 2 cloves garlic minced
  • 1 green bell pepper diced
  • 1 red bell pepper diced
  • 2 cups elbow macaroni
  • 28 ounces crushed tomatoes
  • 15 ounces tomato sauce
  • 2 tablespoons tomato paste
  • 2 teaspoons paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and black pepper to taste

Optional Finish

  • 2 cups shredded cheddar cheese

Instructions
 

  • Cook 2 lb ground beef in a skillet over medium-high heat until browned. Drain excess fat.
  • Add chopped onion and garlic; cook 2–3 minutes. Stir in bell peppers; sauté another 2–3 minutes.
  • Mix in crushed tomatoes, tomato sauce, tomato paste, paprika, oregano, basil, salt, and pepper.
  • Stir in elbow macaroni. Cover and simmer on low for 15–20 minutes, stirring occasionally, until pasta is al dente.
  • Top with cheddar cheese in the final minutes. Cover until melted.
  • Spoon into bowls. Garnish with cheese or parsley if desired. Serve warm.
