Hearty Cowboy Casserole
A hearty, one-dish meal of seasoned beef, creamy sauce, crispy tater tots, bacon, and melted cheddar—all baked into a golden, comforting casserole.
Meat & Dairy
- 225 g ground beef 85/15 lean
- 120 g sharp cheddar cheese shredded (divided)
- 80 mL whole milk
- 60 mL sour cream
- 120 g cooked bacon crumbled
Vegetables & Frozen
- 160 g corn kernels
- 900 g frozen tater tots
Condiments & Seasoning
- 160 g condensed cream of mushroom soup
- 1 tsp onion powder
- ½ tsp black pepper
Set oven to 190°C and grease a baking dish.
Brown ground beef in a skillet (6–8 min), then drain excess fat.
Add corn, soup, half the cheddar, milk, sour cream, seasonings, and bacon. Stir until smooth.
Spread beef mixture in dish, top with remaining cheese, then arrange tater tots evenly.
Bake uncovered for 40–45 minutes until tots are golden.
Top with extra cheddar, bake 5 more minutes. Cool 5 minutes before serving.
