Hearty Cowboy Casserole

A hearty, one-dish meal of seasoned beef, creamy sauce, crispy tater tots, bacon, and melted cheddar—all baked into a golden, comforting casserole.

Ingredients
  

Meat & Dairy

  • 225  g ground beef 85/15 lean
  • 120  g sharp cheddar cheese shredded (divided)
  • 80  mL whole milk
  • 60  mL sour cream
  • 120  g cooked bacon crumbled

Vegetables & Frozen

  • 160  g corn kernels
  • 900  g frozen tater tots

Condiments & Seasoning

  • 160  g condensed cream of mushroom soup
  • 1  tsp onion powder
  • ½  tsp black pepper

Instructions
 

  • Set oven to 190°C and grease a baking dish.
  • Brown ground beef in a skillet (6–8 min), then drain excess fat.
  • Add corn, soup, half the cheddar, milk, sour cream, seasonings, and bacon. Stir until smooth.
  • Spread beef mixture in dish, top with remaining cheese, then arrange tater tots evenly.
  • Bake uncovered for 40–45 minutes until tots are golden.
  • Top with extra cheddar, bake 5 more minutes. Cool 5 minutes before serving.
