Hearty Copycat Taco Bell Chili Cheese
Copycat Taco Bell Chili Cheese is a rich, creamy chili filling made with seasoned ground beef, refried beans, tomato paste, and melted cheddar, wrapped in soft flour tortillas for a satisfying homemade burrito.
- 1 lb ground beef 85 percent lean
- 1 small yellow onion finely diced
- 2 tbsp chili powder
- ¼ tsp cayenne pepper
- 1 tsp salt
- 2 cups water
- 1 tbsp cornstarch
- 2 tbsp water for slurry
- 1 can refried beans 16 oz
- 3 tbsp tomato paste
- 1½ cups shredded cheddar cheese
- 6 large flour tortillas 10 inch
Brown ground beef with onion, then drain fat.
Stir in spices, add water, and simmer gently.
Add cornstarch slurry and cook until thickened.
Mix in refried beans and tomato paste until creamy.
Stir in cheddar cheese until melted.
Warm tortillas, fill, and roll tightly.
Serve hot.
