Ground Beef Cheesy Quesadillas

Crispy, golden tortillas filled with seasoned ground beef and melted cheese, these Ground Beef Cheesy Quesadillas are a quick, satisfying meal the whole family will love—ready in under 30 minutes.

Ingredients
  

For the Quesadillas:

  • 1 pound 90% lean ground beef
  • 1 tablespoon tomato paste
  • ½ cup water
  • 4 burrito-sized flour tortillas
  • 2 cups shredded Mexican cheese
  • 1 tablespoon butter
  • Guacamole and sour cream for serving
  • For the Homemade Taco Seasoning:
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon table salt
  • ½ teaspoon onion powder
  • ½ teaspoon oregano

Instructions
 

  • Brown ground beef in a skillet over medium-high heat, breaking it apart as it cooks.
  • In a small bowl, mix chili powder, garlic powder, cumin, paprika, salt, onion powder, and oregano.
  • Reduce heat to medium. Add seasoning, tomato paste, and water. Cook 2–3 minutes until thickened, then remove from heat.
  • Sprinkle cheese, beef, and more cheese on half of each tortilla. Fold over and set aside.
  • Melt butter in a skillet over medium. Cook quesadillas 2–4 minutes per side until golden and crispy.
  • Cut into wedges and serve with guacamole and sour cream.
