Ingredients

  • 2 large zucchini
  • 2 large tomatoes
  • 8 ounces fresh mozzarella
  • 2 tbsp olive oil
  • Fresh basil leaves
  • 2 tbsp balsamic glaze
  • Salt and black pepper

Instructions

  • Heat an outdoor grill or grill pan to medium-high heat while slicing the zucchini, tomatoes, and mozzarella into similarly sized rounds.
  • Brush both sides of the zucchini with olive oil and season lightly with salt and pepper.
  • Grill the zucchini for about 2–3 minutes on each side until tender with visible grill marks but still firm enough to stack.
  • Transfer the grilled rounds to a platter and allow them to cool for a few minutes so they do not immediately soften the mozzarella.
  • Build each stack with one zucchini round, one tomato slice, one mozzarella slice, and a fresh basil leaf.
  • Repeat the layers if desired, then drizzle the assembled stacks lightly with balsamic glaze and a touch of olive oil.
  • Finish with cracked black pepper and serve immediately while the zucchini is still slightly warm.
