Grilled Zucchini Caprese Stacks layer smoky zucchini, tomato, mozzarella, basil, and balsamic glaze into a fresh summer side.

- 2 large zucchini
- 2 large tomatoes
- 8 ounces fresh mozzarella
- 2 tbsp olive oil
- Fresh basil leaves
- 2 tbsp balsamic glaze
- Salt and black pepper
Heat an outdoor grill or grill pan to medium-high heat while slicing the zucchini, tomatoes, and mozzarella into similarly sized rounds.
Brush both sides of the zucchini with olive oil and season lightly with salt and pepper.
Grill the zucchini for about 2–3 minutes on each side until tender with visible grill marks but still firm enough to stack.
Transfer the grilled rounds to a platter and allow them to cool for a few minutes so they do not immediately soften the mozzarella.
Build each stack with one zucchini round, one tomato slice, one mozzarella slice, and a fresh basil leaf.
Repeat the layers if desired, then drizzle the assembled stacks lightly with balsamic glaze and a touch of olive oil.
Finish with cracked black pepper and serve immediately while the zucchini is still slightly warm.
