Grandma’s Lime Green Jello Salad
A nostalgic favorite, Grandma's Lime Green Jello Salad combines the tang of lime Jello with the creaminess of cottage cheese and pineapple, creating a perfect balance of textures and flavors. It’s an easy-to-make treat that’s both refreshing and comforting.
- 1 package lime Jello
- 2 cups boiling water
- 1 cup cold water
- 1 cup cottage cheese
- 1 can crushed pineapple
- ½ cup Cool Whip (optional, for extra creaminess)
- ½ cup chopped walnuts (optional, for crunch)
In a large bowl, dissolve the lime Jello powder in 2 cups of boiling water. Stir for 2 minutes until fully dissolved.
Stir in 1 cup cold water and the juice from the drained pineapple (about 1/4 cup). Let it cool for 5-10 minutes.
Add cottage cheese and drained pineapple, stirring gently. If using Cool Whip and walnuts, fold them in now.
Pour the mixture into a 9x9-inch dish or mold. Refrigerate for 4-6 hours or overnight until firm.
Once set, cut into squares or unmold onto a platter. Garnish with whipped cream or pineapple chunks before serving.
