Glow-In-The-Dark Moonlit Cake

This Glow-in-the-Dark Moonlit Cake is a soft lemon-vanilla cake with a neon glow that shines under black light. Made with black light-reactive food coloring, this cake is perfect for parties and special occasions.

Ingredients
  

  • 1 ½ tsp baking powder
  • 2 ½ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup butter
  • 1 ½ cups granulated sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 cup milk
  • 2 tsp lemon zest
  • 1 tbsp lemon juice
  • 5 tbsp black light-reactive food coloring
  • ½ cup heavy cream
  • 1 cup powdered sugar

Instructions
 

  • Prepare the batter: Preheat the oven to 350°F (175°C) and grease two 9-inch cake pans. Whisk together flour, baking powder, baking soda, and salt. In another bowl, beat butter and sugar until fluffy, then mix in eggs, vanilla, lemon zest, and lemon juice. Gradually add dry ingredients and milk (or tonic water), mixing gently. Stir in black light-reactive food coloring.
  • Bake the cake: Divide the batter between the pans and bake for 25-30 minutes until a toothpick comes out clean. Let cool for 10 minutes, then transfer to a wire rack.
  • Make the frosting: Whip heavy cream and powdered sugar until stiff peaks form. Mix in black light-reactive food coloring.
  • Assemble the cake: Frost one cake layer, place the second on top, and cover the entire cake with frosting. Sprinkle with edible glow-in-the-dark powder.
  • Glow and serve: Place under a black light to see it glow, and then slice.
