Garlic Parmesan Meatloaves
These Garlic Parmesan Meatloaves combine lean chicken, savory parmesan, and garlic, topped with marinara and mozzarella for a lighter, satisfying twist on traditional meatloaf.
- 1 pound ground chicken
- ½ cup parmesan cheese grated
- ½ cup breadcrumbs
- 2 garlic cloves minced
- 1 egg
- ¼ cup milk
- 1 tablespoon fresh parsley chopped
- 1 teaspoon dried oregano
- 1 teaspoon onion powder
- Salt and pepper to taste
- ¼ cup marinara sauce
- ¼ cup mozzarella cheese shredded
Preheat your oven to 375°F (190°C). Grease a muffin tin with cooking spray or oil.
In a bowl, combine ground chicken, parmesan, breadcrumbs, garlic, egg, milk, parsley, oregano, and onion powder. Season with salt and pepper. Mix gently, being careful not to overmix.
Divide the mixture into the muffin tin, shaping each portion into a small, rounded loaf.
Bake for 20-25 minutes, until golden on top and a meat thermometer reads 165°F (74°C).
Top each meatloaf with marinara sauce and shredded mozzarella. Bake for an additional 5 minutes, until the cheese melts.
