Garlic Parmesan Meatloaves

These Garlic Parmesan Meatloaves combine lean chicken, savory parmesan, and garlic, topped with marinara and mozzarella for a lighter, satisfying twist on traditional meatloaf.

Ingredients
  

  • 1 pound ground chicken
  • ½ cup parmesan cheese grated
  • ½ cup breadcrumbs
  • 2 garlic cloves minced
  • 1 egg
  • ¼ cup milk
  • 1 tablespoon fresh parsley chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • ¼ cup marinara sauce
  • ¼ cup mozzarella cheese shredded

Instructions
 

  • Preheat your oven to 375°F (190°C). Grease a muffin tin with cooking spray or oil.
  • In a bowl, combine ground chicken, parmesan, breadcrumbs, garlic, egg, milk, parsley, oregano, and onion powder. Season with salt and pepper. Mix gently, being careful not to overmix.
  • Divide the mixture into the muffin tin, shaping each portion into a small, rounded loaf.
  • Bake for 20-25 minutes, until golden on top and a meat thermometer reads 165°F (74°C).
  • Top each meatloaf with marinara sauce and shredded mozzarella. Bake for an additional 5 minutes, until the cheese melts.
