- 3 medium zucchini
- 2 tbsp butter
- 3 garlic cloves, minced
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1/4 cup grated Parmesan
- 1/4 tsp black pepper
- Fresh parsley
Spiralize the zucchini into noodles, place them on a clean kitchen towel, and gently pat away any obvious surface moisture before cooking.
Heat olive oil and butter together in a wide skillet over medium-high heat until the butter melts and begins to foam slightly.
Add the minced garlic and cook for about 30 seconds, stirring constantly so it becomes fragrant without turning dark or bitter.
Add the zucchini noodles to the hot skillet and toss continuously for 2–3 minutes, just until they begin to soften but still retain a little firmness.
Remove the skillet from the heat, drizzle in the lemon juice, and sprinkle Parmesan and black pepper over the warm noodles.
Toss gently until the cheese lightly coats the zucchini and the garlic butter is distributed throughout the entire skillet.
Finish with chopped parsley and serve immediately, since zucchini noodles continue releasing moisture the longer they sit.
