Ingredients

  • 3 medium zucchini
  • 2 tbsp butter
  • 3 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/4 cup grated Parmesan
  • 1/4 tsp black pepper
  • Fresh parsley

Instructions

  • Spiralize the zucchini into noodles, place them on a clean kitchen towel, and gently pat away any obvious surface moisture before cooking.
  • Heat olive oil and butter together in a wide skillet over medium-high heat until the butter melts and begins to foam slightly.
  • Add the minced garlic and cook for about 30 seconds, stirring constantly so it becomes fragrant without turning dark or bitter.
  • Add the zucchini noodles to the hot skillet and toss continuously for 2–3 minutes, just until they begin to soften but still retain a little firmness.
  • Remove the skillet from the heat, drizzle in the lemon juice, and sprinkle Parmesan and black pepper over the warm noodles.
  • Toss gently until the cheese lightly coats the zucchini and the garlic butter is distributed throughout the entire skillet.
  • Finish with chopped parsley and serve immediately, since zucchini noodles continue releasing moisture the longer they sit.
