Step 1: Cook the Steak Bites
Pat the steak cubes dry with a paper towel so they sear nicely.
Season with salt, pepper, and smoked paprika.
Heat olive oil in a large skillet over high heat. Once hot, add the steak cubes and cook for 2–3 minutes on each side until browned.
Add butter and minced garlic to the pan. Stir everything together and cook for 1 more minute until it smells amazing.
Sprinkle with chopped parsley, then set the steak aside to rest for about 5 minutes.
Step 2: Make the Creamy Pesto Alfredo Tortellini
Cook the tortellini according to the package instructions. Drain and set aside.
In a saucepan, melt butter over medium heat. Add garlic and cook for about 1 minute until fragrant.
Pour in the heavy cream. Once it starts to simmer, stir in Parmesan cheese and pesto until the sauce is smooth.
Add the tortellini and stir to coat. If the sauce is too thick, add a little pasta water to loosen it up.
Step 3: Serve It Up
Spoon the creamy pesto tortellini onto plates or into bowls.
Top with the garlic butter steak bites.
Drizzle with any extra sauce from the pan and finish with Parmesan and a pinch of red pepper flakes if you like a little heat.
