Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • Salt and pepper
  • 3 tablespoons unsalted butter
  • 3 cloves garlic
  • ½ cup BBQ sauce
  • 2 tablespoons honey
  • 1 tablespoons apple cider vinegar
  • 8 small flour or corn tortillas

Instructions

  • Cook the Chicken: Heat olive oil in a skillet over medium-high heat. Season the chicken with salt and pepper, then cook for 5–7 minutes, stirring occasionally, until golden brown and fully cooked. Remove from the skillet and set aside.
  • Make the Sauce: In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Stir in BBQ sauce, honey, and apple cider vinegar. Whisk until smooth.
  • Coat the Chicken: Return the cooked chicken to the skillet, tossing to coat in the sauce. Let it simmer for 2–3 minutes until thickened.
  • Warm the Tortillas: Heat tortillas in a dry skillet for 30 seconds per side or wrap them in foil and warm in a 350°F oven for 5 minutes.
  • Assemble the Tacos: Fill warm tortillas with saucy chicken. Add toppings like shredded lettuce, diced tomatoes, sliced avocado, shredded cheese, or sour cream. Garnish with cilantro and a squeeze of lime. Serve immediately.
