- 1 lb boneless, skinless chicken breasts or thighs
- 2 tablespoons olive oil
- Salt and pepper
- 3 tablespoons unsalted butter
- 3 cloves garlic
- ½ cup BBQ sauce
- 2 tablespoons honey
- 1 tablespoons apple cider vinegar
- 8 small flour or corn tortillas
Cook the Chicken: Heat olive oil in a skillet over medium-high heat. Season the chicken with salt and pepper, then cook for 5–7 minutes, stirring occasionally, until golden brown and fully cooked. Remove from the skillet and set aside.
Make the Sauce: In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Stir in BBQ sauce, honey, and apple cider vinegar. Whisk until smooth.
Coat the Chicken: Return the cooked chicken to the skillet, tossing to coat in the sauce. Let it simmer for 2–3 minutes until thickened.
Warm the Tortillas: Heat tortillas in a dry skillet for 30 seconds per side or wrap them in foil and warm in a 350°F oven for 5 minutes.
Assemble the Tacos: Fill warm tortillas with saucy chicken. Add toppings like shredded lettuce, diced tomatoes, sliced avocado, shredded cheese, or sour cream. Garnish with cilantro and a squeeze of lime. Serve immediately.
