Frozen Key Lime Pie Parfaits
Tart, tangy, and delightful, these parfaits are the perfect refreshing dessert for a hot summer day.
Crumble:
- 1 cup honey graham crackers finely ground
- 2 tbsp sugar
- 1/4 tsp ginger powder
- 1/4 tsp cinnamon powder
- 4 tbsp melted butter
- Pinch of kosher salt
Frozen Key Lime Filling:
- 1/2 cup key lime juice
- 1/4 cup simple syrup
- 1/4 cup water
Cream Key Lime Filling:
- 1 cup heavy cream
- 1/2 cup sweetened condensed milk
- 4 oz cream cheese
- 1 tsp vanilla extract
- 1/4 cup key lime + zest
Freeze the frozen key lime mixture for 2-3 hours.
Combine graham crackers, sugar, cinnamon, ginger, salt, and melted butter; set aside.
Cream condensed milk and cream cheese for 4 minutes.
Add vanilla, key lime juice, and zest; beat 1-2 more minutes.
Break up the semi-frozen key lime mixture with a fork to maintain the slushy texture.
In small jars, layer the crumble, sorbet, and cream filling; top with more crumble. Serve and enjoy ASAP!
