Frozen Key Lime Pie Parfaits

Tart, tangy, and delightful, these parfaits are the perfect refreshing dessert for a hot summer day.

Ingredients
  

Crumble:

  • 1 cup honey graham crackers finely ground
  • 2 tbsp sugar
  • 1/4 tsp ginger powder
  • 1/4 tsp cinnamon powder
  • 4 tbsp melted butter
  • Pinch of kosher salt

Frozen Key Lime Filling:

  • 1/2 cup key lime juice
  • 1/4 cup simple syrup
  • 1/4 cup water

Cream Key Lime Filling:

  • 1 cup heavy cream
  • 1/2 cup sweetened condensed milk
  • 4 oz cream cheese
  • 1 tsp vanilla extract
  • 1/4 cup key lime + zest

Instructions
 

  • Freeze the frozen key lime mixture for 2-3 hours.
  • Combine graham crackers, sugar, cinnamon, ginger, salt, and melted butter; set aside.
  • Cream condensed milk and cream cheese for 4 minutes.
  • Add vanilla, key lime juice, and zest; beat 1-2 more minutes.
  • Break up the semi-frozen key lime mixture with a fork to maintain the slushy texture.
  • In small jars, layer the crumble, sorbet, and cream filling; top with more crumble. Serve and enjoy ASAP!
