A hearty, one-pan dish featuring crispy potatoes, smoky sausage, and caramelized onions with colorful bell peppers. Easy to make and packed with flavor, it’s perfect for breakfast, lunch, or dinner.
- 1½ pounds russet potatoes
- 1 pound smoked Polish sausage
- 2 tbsp olive oil
- ½ tsp seasoned salt
- ½ tsp Italian seasoning
- ½ red bell pepper
- ½ green bell pepper
- 1 small onion
- Black pepper
- Shredded Parmesan cheese
Sauté the Onions: Melt 1 tablespoon of butter in a large skillet over medium heat. Add the diced onions and cook for 3-4 minutes until soft and translucent. Remove from the pan and set aside.
Cook the Potatoes: In the same skillet, melt 1 tablespoon of butter with 1 tablespoon of olive oil. Add the diced potatoes, seasoned salt, Italian seasoning, and black pepper. Stir to coat, cover, and cook for 15 minutes, stirring occasionally.
Brown the Sausage: Add the sliced smoked sausage to the pan. Cook for about 10 minutes, stirring occasionally, until the sausage is browned and the potatoes develop a crispy, golden crust.
Add Peppers and Onions: Return the sautéed onions to the pan and add the diced red and green bell peppers. Stir and cook for 5-7 minutes until the peppers are slightly tender but still crisp.
Serve and Garnish: Taste and adjust seasoning if needed. Sprinkle with shredded Parmesan cheese if desired, then serve hot.
