Fluffy High Protein Triple Berry Bake

High Protein Triple Berry Bake is a wholesome baked dish made with cottage cheese, eggs, almond flour, and juicy mixed berries. Lightly sweet and naturally rich in protein, this easy bake works beautifully as a healthy breakfast, snack, or light dessert.

Ingredients
  

  • 2 cups full fat cottage cheese
  • 3 large eggs
  • ½ cup almond flour
  • ¼ cup honey or maple syrup or sugar free sweetener
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1 teaspoon baking powder
  • 2 cups mixed berries such as strawberries blueberries, and raspberries

Instructions
 

  • Preheat oven to 350°F (175°C) and grease an 8×8 or 9×9 inch baking dish.
  • Blend cottage cheese and eggs for 30–40 seconds until smooth.
  • Mix with almond flour, honey or maple syrup, vanilla, lemon zest, and baking powder.
  • Gently fold in mixed berries.
  • Pour batter into the baking dish and spread evenly.
  • Bake 35–40 minutes until lightly golden and set.
  • Cool 20–30 minutes, slice, and serve.
