Fluffy High Protein Triple Berry Bake
High Protein Triple Berry Bake is a wholesome baked dish made with cottage cheese, eggs, almond flour, and juicy mixed berries. Lightly sweet and naturally rich in protein, this easy bake works beautifully as a healthy breakfast, snack, or light dessert.
- 2 cups full fat cottage cheese
- 3 large eggs
- ½ cup almond flour
- ¼ cup honey or maple syrup or sugar free sweetener
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest
- 1 teaspoon baking powder
- 2 cups mixed berries such as strawberries blueberries, and raspberries
Preheat oven to 350°F (175°C) and grease an 8×8 or 9×9 inch baking dish.
Blend cottage cheese and eggs for 30–40 seconds until smooth.
Mix with almond flour, honey or maple syrup, vanilla, lemon zest, and baking powder.
Gently fold in mixed berries.
Pour batter into the baking dish and spread evenly.
Bake 35–40 minutes until lightly golden and set.
Cool 20–30 minutes, slice, and serve.
