Fluffy Cottage Cheese Blueberry Cloud Bread
Cottage Cheese Blueberry Cloud Bread is a light, airy baked treat made with whipped egg whites, blended cottage cheese, and fresh blueberries. High in protein and naturally soft, this cloud bread offers a delicate texture and subtle sweetness perfect for breakfast or a wholesome snack.
- 3 large eggs separated
- ½ cup full fat cottage cheese drained and blended until smooth
- 1 tablespoon cornstarch
- ¼ teaspoon cream of tartar
- 1 tablespoon powdered sweetener optional
- ½ teaspoon vanilla extract optional
- ½ teaspoon lemon zest optional
- ½ cup fresh blueberries
Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
Drain cottage cheese and blend about 30 seconds until smooth.
Beat egg whites with cream of tartar for 3–4 minutes until stiff peaks form.
Whisk egg yolks with blended cottage cheese, sweetener, vanilla, lemon zest, and cornstarch until smooth.
Gently fold the yolk mixture into the whipped egg whites.
Carefully fold in the blueberries.
Scoop about ¼ cup batter onto the baking sheet, leaving space between portions.
Bake 25–30 minutes until lightly golden and firm.
Cool about 10 minutes before serving.
