Fluffy Cinnamon Apple Cottage Cheese Pancake Bites
These Cinnamon Apple Cottage Cheese Pancake Bites are fluffy, lightly sweet, and packed with protein. Perfect for breakfast, snacks, or a cozy treat, they combine tender apples, warm cinnamon, and creamy cottage cheese into bite-sized goodness.
- ½ cup 120g cottage cheese
- 1 egg
- 1 small apple peeled and finely chopped
- ¼ cup oat flour or almond flour for low-carb
- ½ teaspoon baking powder
- ½ teaspoon ground cinnamon
- 1–2 teaspoons maple syrup or honey optional
- Pinch of salt
Preheat oven to 350°F (175°C). Grease a mini muffin pan or line with cups.
Whisk cottage cheese, egg, and maple syrup until smooth. Stir in oat flour, baking powder, cinnamon, and salt until just combined.
Fold in chopped apples, then spoon batter into muffin cups, filling ¾ full.
Bake 15–18 minutes, until golden and a toothpick comes out clean. Cool 5 minutes before removing. Serve warm, plain or with maple syrup.
