Fluffy Cinnamon Apple Cottage Cheese Pancake Bites

These Cinnamon Apple Cottage Cheese Pancake Bites are fluffy, lightly sweet, and packed with protein. Perfect for breakfast, snacks, or a cozy treat, they combine tender apples, warm cinnamon, and creamy cottage cheese into bite-sized goodness.

Ingredients
  

  • ½ cup 120g cottage cheese
  • 1 egg
  • 1 small apple peeled and finely chopped
  • ¼ cup oat flour or almond flour for low-carb
  • ½ teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • 1–2 teaspoons maple syrup or honey optional
  • Pinch of salt

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a mini muffin pan or line with cups.
  • Whisk cottage cheese, egg, and maple syrup until smooth. Stir in oat flour, baking powder, cinnamon, and salt until just combined.
  • Fold in chopped apples, then spoon batter into muffin cups, filling ¾ full.
  • Bake 15–18 minutes, until golden and a toothpick comes out clean. Cool 5 minutes before removing. Serve warm, plain or with maple syrup.
