Fluffy Caramelized Onion And Gruyère Cottage Cheese Bake

A savory, protein-rich bake made with caramelized onions, cottage cheese, and nutty Gruyère—fluffy, flavorful, and comforting, perfect for brunch or dinner.

Ingredients
  

  • 1 tablespoon butter
  • 2 large yellow onions thinly sliced
  • 2 cups cottage cheese
  • 3 large eggs
  • 1 cup shredded Gruyère cheese divided
  • 1 teaspoon fresh thyme leaves
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Melt butter in a skillet over medium-low. Add sliced onions and cook 25–30 minutes, stirring occasionally, until golden and sweet. Set aside.
  • Heat oven to 375°F (190°C) and grease a 9-inch pie or baking dish.
  • Whisk cottage cheese and eggs in a bowl. Stir in ¾ cup Gruyère, thyme, salt, pepper, and onions.
  • Pour into dish and top with remaining ¼ cup Gruyère.
  • Bake uncovered for 35–40 minutes until puffed, golden, and set in the center.
  • Cool for 10 minutes, then slice and serve warm or at room temp.
