Fluffy 5-Minute Cinnamon Roll Mug Cake

This fluffy cinnamon roll mug cake is a quick, single-serving dessert made in just minutes, featuring warm cinnamon flavor, a tender crumb, and simple, wholesome ingredients.

Ingredients
  

  • ¼ cup cottage cheese
  • 1 large egg
  • 2 tbsp almond flour or oat flour
  • 1 tbsp maple syrup or honey
  • ½ tsp vanilla extract
  • ½ tsp ground cinnamon
  • ¼ tsp baking powder
  • Pinch of salt

For the Cinnamon Swirl Optional

  • 1 tsp maple syrup
  • ¼ tsp ground cinnamon

Optional Topping

  • 1 tbsp Greek yogurt or cream cheese
  • Sweetener of choice for frosting

Instructions
 

  • Add the cottage cheese, egg, almond flour, maple syrup, vanilla extract, ground cinnamon, baking powder, and salt to a bowl or blender. Blend or whisk until fully smooth with no visible curds. The batter should be thick but still pourable. If it feels too dense, stir in 1 tsp water or milk to loosen it.
  • Lightly grease a microwave-safe mug with oil or cooking spray to help the cake rise evenly and release easily.
  • Pour the batter into the mug, filling it no more than halfway. If using the cinnamon swirl, mix the maple syrup and cinnamon, drizzle it over the top, and gently swirl with a toothpick or spoon, keeping the motion light so the pattern stays visible.
  • Place the mug in the center of the microwave and cook on high for 1 to 1½ minutes. Check at 1 minute. The top should look set and feel slightly springy. If the center appears wet, continue microwaving in 10-second intervals until done.
  • Let the mug cake rest for 1 to 2 minutes so the texture finishes setting and the center cools slightly.
  • Finish with Greek yogurt or cream cheese mixed with a touch of sweetener, allowing it to soften and melt into the warm cake before serving.
