Festive Orange Cranberry Quinoa Salad

- 1 cup cooked quinoa
- ½ cup fresh cranberries chopped
- 1 orange peeled and diced
- ¼ cup chopped fresh cilantro
- ¼ cup chopped pecans or walnuts
- 2 tbsp honey
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Pinch of salt
Rinse and cook the quinoa according to package instructions. Allow it to cool to room temperature.
In a small bowl, whisk honey, olive oil, lemon juice, and a pinch of salt until smooth.
