Festive Orange Cranberry Quinoa Salad

Ingredients
  

  • 1 cup cooked quinoa
  • ½ cup fresh cranberries chopped
  • 1 orange peeled and diced
  • ¼ cup chopped fresh cilantro
  • ¼ cup chopped pecans or walnuts
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Pinch of salt

Instructions
 

  • Rinse and cook the quinoa according to package instructions. Allow it to cool to room temperature.
  • In a small bowl, whisk honey, olive oil, lemon juice, and a pinch of salt until smooth.
  • In a large bowl, mix cooked quinoa, cranberries, orange, cilantro, and nuts.
  • Pour the dressing over the salad and toss gently to combine.
  • Serve the salad chilled or at room temperature for the best flavors.
