Preheat your oven to 180°C (350°F) and grease a muffin tin.
In a skillet, brown the chopped onion and garlic until soft.
In a large mixing bowl, combine the cooked onion and garlic with the ground pork, grated zucchini, carrot, egg, oats, mixed herbs, salt, pepper, tomato sauce, and barbecue sauce.
Mix everything together until well combined.
Divide the mixture evenly into the muffin tin, pressing it into each cup.
Mix some extra tomato and barbecue sauce in a small bowl, and spoon this over the top of each meatloaf muffin.
Bake for 20 minutes or until cooked through. Serve and enjoy!
