Easy Meatloaf Muffins

They’re easy to make, freeze well, and pack a lot of flavor!

Ingredients
  

  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 1 lb ground pork (450g)
  • 1 zucchini grated
  • 1 carrot grated
  • 1 egg
  • 1 cup oats
  • 1 tsp mixed herbs
  • 1/4 cup tomato sauce
  • 1/4 cup barbecue sauce
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 180°C (350°F) and grease a muffin tin.
  • In a skillet, brown the chopped onion and garlic until soft.
  • In a large mixing bowl, combine the cooked onion and garlic with the ground pork, grated zucchini, carrot, egg, oats, mixed herbs, salt, pepper, tomato sauce, and barbecue sauce.
  • Mix everything together until well combined.
  • Divide the mixture evenly into the muffin tin, pressing it into each cup.
  • Mix some extra tomato and barbecue sauce in a small bowl, and spoon this over the top of each meatloaf muffin.
  • Bake for 20 minutes or until cooked through. Serve and enjoy!
