Easy Lemon 7-Up Cake

A light, moist cake infused with lemon flavor and a subtle lift from lemon-lime soda, finished with a simple citrus glaze.

Ingredients
  

From Scratch

  • 5 eggs
  • 3 cups flour
  • ¾ lb butter softened
  • 3 cups sugar
  • 2 tablespoons lemon juice or extract
  • ¾ cup lemon-lime soda

Using Box Mix

  • 1 box yellow cake mix
  • 4 eggs
  • ¾ cup vegetable oil
  • 1 box instant lemon pudding
  • ¾ cup lemon-lime soda

Lemon Glaze

  • 1 cup powdered sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon milk

Instructions
 

  • Preheat oven to 325°F and grease a Bundt pan.
  • Beat butter and sugar 8–10 minutes until light and fluffy.
  • Add eggs one at a time, mixing well after each.
  • Mix in flour and lemon juice or extract until combined.
  • Gently fold in lemon-lime soda.
  • Pour into pan and bake 60–75 minutes until set and lightly golden.
  • Cool on a wire rack before removing from pan.
  • Mix powdered sugar, lemon juice, and milk until smooth.
  • Drizzle glaze over cooled cake and let set before slicing.
