Easy Homemade Caramel Corn

- 1 cup popcorn kernels
- 1 cup unsalted butter
- ½ cup light corn syrup
- 2 cups packed light brown sugar
- 1 tsp kosher salt
- ½ tsp baking soda
- 1½ tsp vanilla extract
Preheat oven to 250°F (120°C) and line two baking sheets with parchment paper.
Pop the popcorn and place it in 2-3 large bowls, leaving room to toss it with caramel sauce.
In a saucepan, melt butter over medium heat. Stir in corn syrup, brown sugar, and salt, then bring to a boil. Boil without stirring for 5 minutes.
Remove from heat. Stir in baking soda and vanilla extract carefully, as the mixture will bubble.
Pour caramel sauce over the popcorn and toss until evenly coated. Spread onto prepared baking sheets.
Bake for 40-50 minutes, stirring every 10 minutes. Cool completely before storing in airtight containers.
