Easy Homemade Caramel Corn

Ingredients
  

  • 1 cup popcorn kernels
  • 1 cup unsalted butter
  • ½ cup light corn syrup
  • 2 cups packed light brown sugar
  • 1 tsp kosher salt
  • ½ tsp baking soda
  • tsp vanilla extract

Instructions
 

  • Preheat oven to 250°F (120°C) and line two baking sheets with parchment paper.
  • Pop the popcorn and place it in 2-3 large bowls, leaving room to toss it with caramel sauce.
  • In a saucepan, melt butter over medium heat. Stir in corn syrup, brown sugar, and salt, then bring to a boil. Boil without stirring for 5 minutes.
  • Remove from heat. Stir in baking soda and vanilla extract carefully, as the mixture will bubble.
  • Pour caramel sauce over the popcorn and toss until evenly coated. Spread onto prepared baking sheets.
  • Bake for 40-50 minutes, stirring every 10 minutes. Cool completely before storing in airtight containers.
