Easy Hobo Casserole

Hobo Casserole is a cozy, all-in-one dish with ground meat, veggies, and creamy mushroom sauce topped with melted cheddar—easy, filling, and family-friendly.

Ingredients
  

  • 1 pound ground beef or turkey
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 3 medium potatoes thinly sliced
  • 2 cups carrots thinly sliced
  • 1 can 15 oz green beans, drained
  • 1 can 10.5 oz cream of mushroom soup
  • ½ cup whole milk
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 cup shredded cheddar cheese or blend

Instructions
 

  • Set your oven to 375°F and grease a 9x13-inch baking dish.
  • In a skillet, cook the ground meat with onion and garlic until browned. Drain any extra fat.
  • In a big bowl, combine the cooked meat, sliced potatoes, carrots, green beans, mushroom soup, milk, and seasonings.
  • Spread the mixture into the dish. Cover with foil and bake for 45 minutes.
  • Uncover the dish, sprinkle cheese on top, and bake for 15 more minutes until melted and bubbly.
  • Let the casserole sit for 5 minutes, then slice and serve.
