Easy Hobo Casserole
Hobo Casserole is a cozy, all-in-one dish with ground meat, veggies, and creamy mushroom sauce topped with melted cheddar—easy, filling, and family-friendly.
- 1 pound ground beef or turkey
- 1 medium onion finely chopped
- 2 cloves garlic minced
- 3 medium potatoes thinly sliced
- 2 cups carrots thinly sliced
- 1 can 15 oz green beans, drained
- 1 can 10.5 oz cream of mushroom soup
- ½ cup whole milk
- 1 teaspoon Italian seasoning
- Salt to taste
- Freshly ground black pepper to taste
- 1 cup shredded cheddar cheese or blend
Set your oven to 375°F and grease a 9x13-inch baking dish.
In a skillet, cook the ground meat with onion and garlic until browned. Drain any extra fat.
In a big bowl, combine the cooked meat, sliced potatoes, carrots, green beans, mushroom soup, milk, and seasonings.
Spread the mixture into the dish. Cover with foil and bake for 45 minutes.
Uncover the dish, sprinkle cheese on top, and bake for 15 more minutes until melted and bubbly.
Let the casserole sit for 5 minutes, then slice and serve.
