Easy Hawaiian Chicken Delight

This Easy Hawaiian Chicken Delight features marinated chicken in teriyaki sauce, paired with pineapple, bell pepper, and onions. Topped with cilantro and sesame seeds, it's served over jasmine rice for a flavorful island-inspired meal.

Ingredients
  

  • 4 boneless skinless chicken breasts (or thighs for juicier meat)
  • ½ cup teriyaki sauce homemade: see recipe below
  • 1 tbsp coconut oil or olive oil
  • 1 small pineapple 1 cup diced, + ½ cup reserved juice
  • 1 red bell pepper julienned
  • 1 small red onion thinly sliced

Optional Toppings:

  • Chopped fresh cilantro
  • Sesame seeds
  • Extra pineapple chunks

Instructions
 

  • Slice chicken breasts into thin cutlets and marinate in teriyaki sauce for 15-20 minutes (or up to 2 hours for more flavor).
  • Heat coconut oil in a skillet over medium-high heat. Sear chicken for 3-4 minutes on each side until golden and cooked through (internal temp of 165°F). Set aside.
  • In the same skillet, combine ½ cup pineapple juice and ½ cup teriyaki sauce. Simmer for 2 minutes. Add diced pineapple, red bell pepper, and onion. Sauté for 5 minutes until tender.
  • Slice chicken into strips and return to the skillet. Toss with sauce and veggies, cooking for another 2 minutes. Serve over jasmine or coconut rice, garnished with cilantro, sesame seeds, and pineapple chunks.
