Easy Ground Turkey Pot Pie
Ground Turkey Pot Pie is a creamy, veggie packed ground turkey pot pie topped with a flaky sour cream crust. This comforting family dinner is practical, budget friendly, and perfect for busy weeknights.
For the crust
- 1¼ cups flour
- ¾ tsp salt
- 6 tbsp cold butter cubed
- ¼ cup sour cream
- 1 egg
For the filling
- 6 tbsp butter
- ½ cup onion diced
- 6 tbsp flour
- 2½ tsp rosemary
- 1½ tsp paprika
- 1½ tsp salt
- 1¼ tsp pepper
- Pinch nutmeg
- 2 cups chicken broth
- ¾ cup cream
- 1½ cups sweet potato cubed
- 1 cup russet potato cubed
- ¾ cup carrots
- 3 cups cooked ground turkey
- 1 cup corn
- 1 cup green beans
Pulse flour, salt, butter, and sour cream into dough. Chill.
Prep vegetables and preheat oven to 400°F.
Cook onion, spices, broth, cream, and vegetables until tender.
Stir in turkey, corn, and green beans. Transfer to baking dish.
Roll dough, place on top, cut vents, brush with egg.
Bake 28–32 minutes until golden. Rest 5 minutes before serving.
