Easy French Apple Cake

Ready in less than an hour, this cake is light, flavorful, and ideal for an afternoon treat or dessert.

Ingredients
  

  • 2 large apples peeled and cubed
  • 2 eggs room temperature
  • 1/3 cup brown sugar
  • 1/2 cup unsalted butter melted
  • 1/2 cup applesauce
  • 1 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon optional
  • Pinch of salt
  • Flaked almonds and raw sugar for topping optional

Instructions
 

  • Preheat oven to 350°F (180°C). Line a 9-inch springform pan and grease the sides.
  • Whisk eggs and brown sugar until foamy. Add melted butter and applesauce, and mix until combined.
  • Stir in flour, baking powder, cinnamon, and salt until just combined.
  • Fold in the apples and pour the batter into the prepared pan.
  • Optionally, top with flaked almonds and raw sugar.
  • Bake for 30-35 minutes, or until a skewer comes out clean. Cool before serving.
