Easy Chicken Black Bean Cottage Cheese Skillet
A quick one pan meal featuring seasoned chicken, black beans, sweet corn, and creamy cottage cheese, finished with fresh herbs and lime for a balanced and protein rich dinner.
- 2 chicken breasts diced
- 1 cup black beans cooked
- 1 cup corn kernels
- 1 cup cottage cheese
- 1 tablespoon chili powder
- 1 tablespoon olive oil
- Salt and freshly ground black pepper to taste
- Chopped cilantro optional
- Lime wedges optional
Heat olive oil in a large skillet over medium-high heat for about 1 minute.
Add diced chicken, season with chili powder, salt, and pepper, and cook 5 to 7 minutes until lightly golden and fully cooked.
Stir in black beans and corn and cook 3 to 4 minutes until heated through.
