Easy Chicken Black Bean Cottage Cheese Skillet

A quick one pan meal featuring seasoned chicken, black beans, sweet corn, and creamy cottage cheese, finished with fresh herbs and lime for a balanced and protein rich dinner.

Ingredients
  

  • 2 chicken breasts diced
  • 1 cup black beans cooked
  • 1 cup corn kernels
  • 1 cup cottage cheese
  • 1 tablespoon chili powder
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper to taste
  • Chopped cilantro optional
  • Lime wedges optional

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat for about 1 minute.
  • Add diced chicken, season with chili powder, salt, and pepper, and cook 5 to 7 minutes until lightly golden and fully cooked.
  • Stir in black beans and corn and cook 3 to 4 minutes until heated through.
  • Reduce heat to medium-low, add cottage cheese, and stir until slightly melted and creamy.
  • Taste and adjust salt, pepper, or chili powder if needed.
  • Serve hot, topped with chopped cilantro and lime wedges.
