Apple Cinnamon Cottage Cheese Bake is a warm, protein rich baked dish made with cottage cheese, eggs, apples, oats, maple syrup, and cinnamon. It bakes into a soft, lightly sweet breakfast or snack with cozy fall flavors.

Ingredients
  

  • 2 cups cottage cheese
  • 3 large eggs
  • 1 large apple peeled and finely diced
  • ½ cup rolled oats or almond flour
  • ¼ cup maple syrup or honey
  • 1 ½ teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder

Instructions
 

  • Preheat oven to 350°F (175°C) and lightly grease a 9×9 inch baking dish.
  • Whisk cottage cheese, eggs, maple syrup, and vanilla until well combined.
  • Stir in oats or almond flour, cinnamon, and baking powder until evenly mixed.
  • Fold in finely diced apple.
  • Pour the batter into the baking dish and spread evenly.
  • Bake 35 to 40 minutes until the top is golden and a toothpick comes out clean.
  • Let cool slightly, then slice into squares and serve.
