Preheat oven to 350°F (175°C). Spray a 9x13 casserole dish with non-stick spray.
Cook ground beef over medium-high heat until browned. Drain fat. Stir in taco seasoning if using.
Add cheddar cheese soup, cream of chicken soup, evaporated milk, and diced green chilies to beef. Heat, stirring until bubbly and smooth.
Spread half the Doritos in the dish, lightly crushed. Top with half the meat mixture and 1 cup shredded cheese.
Layer remaining Doritos, meat mixture, and cheese on top.
Bake for 20 minutes until cheese melts, bubbles, and edges brown.
Let rest 5 minutes. Serve hot with optional toppings like sour cream, green onions, tomatoes, avocado, or salsa.
