Delightful Cottage Cheese Banana Bread
Cottage Cheese Banana Bread is a moist, protein rich banana bread made with almond flour, ripe bananas, eggs, and creamy cottage cheese, lightly sweetened with maple syrup and scented with cinnamon.
- 2 ripe bananas mashed
- 3 large eggs
- ½ cup cottage cheese
- 3 tablespoons maple syrup
- 2 teaspoons vanilla extract
- 2½ cups almond flour
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- ½ cup walnuts chocolate chips or blueberries optional
Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line with parchment paper.
Mash the ripe bananas in a large bowl until smooth.
Add eggs, cottage cheese, maple syrup, and vanilla, mixing until well combined.
Whisk almond flour, baking soda, and cinnamon in another bowl.
Stir the dry ingredients into the banana mixture until just combined, folding in optional walnuts, chocolate chips, or blueberries if desired.
Pour the batter into the prepared loaf pan and smooth the top.
Bake 50 to 60 minutes until golden and a toothpick inserted in the center comes out clean.
Cool in the pan 10 minutes, then transfer to a wire rack to cool completely before slicing.
