Delightful Cottage Cheese Banana Bread

Cottage Cheese Banana Bread is a moist, protein rich banana bread made with almond flour, ripe bananas, eggs, and creamy cottage cheese, lightly sweetened with maple syrup and scented with cinnamon.

Ingredients
  

  • 2 ripe bananas mashed
  • 3 large eggs
  • ½ cup cottage cheese
  • 3 tablespoons maple syrup
  • 2 teaspoons vanilla extract
  • cups almond flour
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • ½ cup walnuts chocolate chips or blueberries optional

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line with parchment paper.
  • Mash the ripe bananas in a large bowl until smooth.
  • Add eggs, cottage cheese, maple syrup, and vanilla, mixing until well combined.
  • Whisk almond flour, baking soda, and cinnamon in another bowl.
  • Stir the dry ingredients into the banana mixture until just combined, folding in optional walnuts, chocolate chips, or blueberries if desired.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake 50 to 60 minutes until golden and a toothpick inserted in the center comes out clean.
  • Cool in the pan 10 minutes, then transfer to a wire rack to cool completely before slicing.
