Date Coffee Loaf Cake with Walnuts is a tender, warmly spiced loaf made with soaked dates, rich brown sugar, and crunchy walnuts — perfect for breakfast, coffee breaks, or cozy afternoon snacking.

Ingredients
  

  • 1 cup chopped dates
  • 1 cup boiling water
  • 1 teaspoon baking soda
  • ½ cup unsalted butter softened
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • cups all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ½ cup chopped walnuts

Instructions
 

  • Preheat to 350°F, prep a 9×5 pan, soak chopped dates with boiling water and baking soda for 10 minutes.
  • Cream butter and brown sugar, beat in eggs one at a time, then add vanilla.
  • Whisk flour, salt, baking powder, and cinnamon; fold into the wet mixture gently.
  • Add the soaked dates with their liquid and fold in the walnuts.
  • Pour into the pan, bake 50–60 minutes until a toothpick comes out clean, cool 10 minutes, then move to a rack.
