Date Coffee Loaf Cake with Walnuts is a tender, warmly spiced loaf made with soaked dates, rich brown sugar, and crunchy walnuts — perfect for breakfast, coffee breaks, or cozy afternoon snacking.
- 1 cup chopped dates
- 1 cup boiling water
- 1 teaspoon baking soda
- ½ cup unsalted butter softened
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1½ cups all-purpose flour
- ½ teaspoon salt
- 1 teaspoon baking powder
- ½ teaspoon ground cinnamon
- ½ cup chopped walnuts
Preheat to 350°F, prep a 9×5 pan, soak chopped dates with boiling water and baking soda for 10 minutes.
Cream butter and brown sugar, beat in eggs one at a time, then add vanilla.
Whisk flour, salt, baking powder, and cinnamon; fold into the wet mixture gently.
Add the soaked dates with their liquid and fold in the walnuts.
Pour into the pan, bake 50–60 minutes until a toothpick comes out clean, cool 10 minutes, then move to a rack.
